RICE FLOUR, BROWN SUGAR, SUGAR, DARK CHOCOLATE CHIPS (ORGANIC CANE SUGAR, UNSWEETENED CHOCOLATE, COCOA BUTTER), BUCKWHEAT FLOUR, CORNSTARCH, POTATO STARCH, TAPIOCA STARCH, SALT, XANTHAN GUM, BAKING SODA.

  • 1 egg
  • 1/2 cup melted and cooled butter
  • 2 tbsp water
  • 1 tsp vanilla
  • VEGAN option: Substitute butter with vegetable oil, margarine or butter substitute. Substitute egg with 3 Tbsp canned chickpea brine.Directions:
    1. Preheat oven to 375°F (190°C).
    2. Line a cookie sheet with parchment paper.
    3. Empty bag into a mixing bowl and set aside.
    4. In a separate microwave-safe bowl, melt the butter and let cool slightly.
    5. Add the egg, water, and vanilla to the butter and mix.
    6. Pour the wet ingredients into the dry mix and combine together.
    7. Place 2 tbsp portions of the cookie dough onto the cookie sheet, and flatten slightly.
    8. Bake for 12 – 15 minutes and allow to cool.

    Makes approximately 18 – 20 cookies.
